spelt chocolate patty pan bread

INGREDIENTS

  • 3 cups spelt flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp cinnamon

  • 3 eggs, large

  • 1 cup extra virgin olive oil

  • 1 cup coconut sugar

  • 3 tsp vanilla extract

  • 2 cups grated patty pan (or zucchini)

  • 100 grams dark chocolate chips

METHODS

  1. Preheat oven to 350F.

  2. Add all dry ingredients (except chocolate chips) to mixing bowl. Combine together.

  3. Add all wet ingredients (except patty pans) to a separate mixing bowl. Whisk together.

  4. Pour wet ingredients into dry ingredients. Combine together using spatula until almost combined. Add patty pan and chocolate chips. Fold together evenly. Pour ingredients into loaf pan.

  5. Bake for 50 to 60 minutes. Allow to cool for at least 20 minutes before slicing.

TIPS + TRICKS

  • Store at room temperature for up to four days, fridge for up to one week, or freeze for up to six months.

  • Use another oil such as coconut oil or avocado oil instead of olive oil.

  • No eggs? Use flaxseed egg by combining 2 tbsp flax with 5 tbsp warm water together.

  • No spelt flour? Use another flour source such as unbleached white, whole wheat (denser), all-purpose (fluffier, lighter), or another blend.

  • Gluten free? Use 1-1 gluten free baking flour blend.

  • No patty pans? Use grated zucchini instead.

  • Enhance experience? Add chopped walnuts. Add nutmeg.

  • Half fat? Use 1/2 cup oil and 1/2 cup apple sauce instead.
