gluten free sesame coconut cookies

INGREDIENTS

  • 450 grams gluten free flour (Bobs Red 1-1) (approx. 3 1/4 cup)

  • 2 tsp baking powder

  • 1 tsp salt

  • 226 grams coconut oil or butter (1 cup)

  • 2 tbsp milk

  • 150 grams brown sugar (3/4 cup)

  • 100 grams cane sugar (1/2 cup)

  • 2 eggs, large

  • 3 tsp vanilla extract

  • 200 grams chocolate chips (1 cup)

  • 1 cup coconut flakes

  • ⅓ sesame seeds

METHOD

  1. Preheat oven to 350F.

  2. Add flour, baking powder, and salt into a mixing bowl. Fluff together with a fork to evenly distribute.

  3. Add the brown sugar, cane sugar, and room temperature butter (or oil). Whisk together vigorously until fluffy. Add eggs and vanilla extract. Whisk again to incorporate.

  4. Fold the wet ingredients into the dry ingredients. Add the chocolate chips, coconut flakes, and sesame seeds. Fold together evenly.

  5. Bake cookies for 12 minutes, or until the outside is gently golden. Allow to cool completely.
